Hello loves! This is going to be a big one! Thursday through Sunday eats!
Thursday
Eggs & toast for breakfast
Pre-lunch snack was half of this little bowl of potato salad. I was rushing out the door in this moment, but knew I’d be gone for about 2 hours. I needed to put something in my stomach, so I had a little bit of this to hold me over until I could actually sit down to lunch.
About 2 hours later, I came home and had half a sandwich and cabbage salad 15 minutes before work. Still in a hurry, but it was more than the previous 5 minutes
Dinner, I got to sit down and really enjoy a meal. I had cheese-less enchiladas (my Dad made part of them dairy-free) with homemade, rice, beans, and a few chips. I also had salad on the side.
My petite treat was 2 squares of dark chocolate.
I was watching kids Thursday night, and after they went down I spend about 2 hours studying my school books. I’m done with school, yes, but I can never stop learning for my Clients. Plus, Joshua Rosenthal is an awesome, down to earth writer. I love him!
Friday
Friday morning started off with eggs & toast
Then quiet time followed that. I had another little cold last week, so I tried sleeping until 7 each day. That meant I woke up hungry and usually had quiet time after breakfast.
Lunch was half a turkey sandwich on toasted sourdough and a big salad with spring mix, cabbage, mushrooms, and asian dressing
A little while after lunch I made a smoothie with little Kampbell. We put kale, juice plus chocolate powder, almond milk, banana, and greens powder. Yummy
A while later I took the girls to the park and Blenders. To avoid my weekly smoothie, I really didn’t want one… I got an Unsweetened Matcha tea at Starbucks & this little Evolution bar that was just okay. (The tea, that was more than okay! Yum!)
Dinner was 2 cheese-less enchiladas after the Gym with Marco
What I was really craving was brown rice, broccoli, and avocado. But I was too hungry to wait. That’s what happens when you live in a house full of leftovers I guess
So, I had a tiny little 2-3 bite bowl afterword just to get the taste of the rice
For a petite treat, I made banana PB “ice-cream” in my food processor. I sprinkled granola on top.
Saturday
Saturday morning started off with bran flakes, organic raisins, and almond milk
Shortly after breakfast I received my Tea Leaves Matcha! Ahhh…. So excited about this!
I made a tea-latte right away. I need to better perfect this, and then I’ll share a recipe!
For lunch, I went with Marco’s grandma & aunt to Cafe Fiore. We had a girls day, went shopping, and had this delicious lunch!
I got an Ahi Salad that was soo good!
For dinner, we had Indian Food. Chicken Curry with Naan bread and a cabbage salad. My Dad once again, is the king Chef.
For dessert, I made Marco cookies from TJ’s, and had half of one to taste. They were super sweet.
Sunday
Eggs & toast for breakfast
Unsweetened Matcha tea latte with Stephanie! My sweet Client that I got to meet for the first time after working together for 6-months. Ah, so fun!
After tea, Marco picked me up and we headed back to Church to Grouplink. We got linked into a great Community Group and can’t wait to start! They were serving snacks – this is what I had: fruit salad, a few crackers, one little finger-sized bread roll.
For lunch I had brown rice with Chicken Curry. Yum… I’m guessing I will even have this again today. It’s so good! And did I mention it’s packed with Kale?
A few hours later, after spending time cleaning and organizing I had a few chips & salsa. I had about half of these chips and put the rest back. Then, Marco and I went walking downtown.
While walking downtown I was craving chocolate. I just wanted something super sweet, and super rich… but not too big…
So, when I got home I made myself a little Cold Stone style ice cream.
I mixed 2 scoops of ice cream, half a banana, and an 1/8 cup each Peanut Butter M&M’s and Granola.
Voila! It was so good! I ate it really slow and totally savored every bite. My sweet tooth was gone and satisfied after this.
Yes, I had dessert before dinner
About an hour later we had Taco Salad for dinner. That was good. But less satisfying than I would have liked because I am trying to do my best avoiding dairy, and I love taco salad with bleu cheese.
Last night (darn, I didn’t take a photo!) my living room was completely filled. Three couches, two chairs, and the carpet area was filled with women watching the Bachelor Wedding of Sean & Catherine. I know, go ahead… we are so cheesy! But it was so much fun. We had a blast. During the show, I snacked on chips & bean dip with the ladies, but mostly tried to keep myself satisfied with a warm cup of decaf coffee + water.
Today is Monday guys! I hope you’re ready for a good week! I’m off to walk with my Mom, then Marco and I are going to meet with our pre-marital counselor/officiant before I start work for the day.
