Hi everyone! I’m typing to you all with a missing finger.
Well, not missing, but it’s all wrapped up and completely useless. This little finger got burned last night from a pan that was in my 425 degree oven. Not so fun More on that at the bottom of this post
I feel like I can’t do a post without including my Green Smoothie. This Green Smoothie was had everyday this weekend, as usual. I actually think I had more than one Saturday. I was feelin’ extra green! (Or extra busy)
This weekends eats also included a super easy dinner.
-Steamed brussel sprouts with olive oil, sea salt, and pepper
-Quinoa with soy sauce
-Chicken chile lime burger with 1/4 an avo
I want to start making my own veggie patties soon! Anyone have a great recipe?
This Saturday, I had a Stella & Dot party. This is really the only time I dress up. I always think of these parties as an opportunity to dress up!

The Host on Saturday was great! She set out mimosas (we only drank the OJ, ha!), quiche, and a fruit bowl. So pretty, right?!
This quiche was from Costco, and had all whole ingredients. Loved that!
Here’s our set-up!
The quiche inspired me to make my own version Saturday night. Marco and I had it for dinner, and have now been enjoying it daily for breakfast with a few potatoes on the side. SO easy to make.
Oven at 350.
Mixed in a bowl: 12 eggs, 1/2 an onion + one block of tofu cut in tiny chunks (onion and tofu sauteed in olive oil first), 2 handfuls of chopped spinach, salt and pepper, and italian seasoning.
I baked this in a dish sprayed with non-stick coconut oil spray for about 20/25 minutes. Just check on it a few times, and check the middle with a fork It took a total of about 40 minutes, but now I’ve had 2 minute breakfasts daily. Simple!
I baked the potatoes for about 40 minutes while I was prepping the casserole, and for about 10 minutes while the casserole was cooking. When then casserole was about halfway through I pulled the taters out, cut them into chunks, and then cooked them in olive oil on a pan. Worked perfectly!
Salsa on top Marco added cheese to his, which is what most recipes call for.

Yesterday was a total furniture shopping day! IKEA and Ashley Furniture. I can’t wait to show you guys what we got!
In between all of the shopping, Marco and I met my bro & sis for a Korean food lunch. YUM!

Now here comes the pathetic part
Last night when I was cooking (oven at 425) I totally burned my finger THROUGH the oven mit. I guess I’ve never turned my oven that high, because I’ve used that mit over and over…
My makeup was everywhere. Marco was making fun of me (and taking such good care of me, I might add- I’m so lucky). Do you see that? ^ Ha!
I had to soak my hand in ice cold water for over an hour, take ibuprofen, and get burn spray which my Mom brought over. It freaking SUCKED.
Now I am one finger down for a few days. This whole typing thing has become pretty interesting!
