Breakfast was eggs n’ toast. I’m experimenting with some animal products again. Organic eggs, cheese, and half + half in my Coffee… Not sure how it’s going. Things are slowing down! I’ll write about this again after a week or so.
Lunch was Lentil soup with toasted rosemary bread on top. So good! Brush your fresh bread with olive oil, sprinkle with S+P, toast it, and put it in your soup. It will absorb the liquid. It’s wonderful!
After lunch, I finished moving. I’m now in a one bedroom! When everything was set up, I set out on adventure to find lighting for the house. My other apartment has lights built into the walls. This one, not so much! I found a good find at Bed Bath and Beyond, and also picked up this Peach Lolli
For dinner, Marco and I ate with his parents. We had pineapple salmon with rice and ficohsa bread. It was soo good, and I’m totally bummed I forgot to take a picture!
For dessert, they brought over a Marie Calendars french apple pie. Yum! I enjoyed one small slice.
And of course, to end the night Marco and I had Popcorn and shared a peach-pear La Croix.

Sunday morning started with a Green Smoothie
After Chruch, we ran some errands and then came home and made an unusually delicious omelette!
Typically, I do not feel like anything fishy for breakfast, so I saved this for lunch. I took the leftover salmon and rice, heated it up in a pan, and made an omelette out of it. It was soooo good! I added Organic Mozzarella + avo.. Mmmmm! Must make this again!
In the middle of the day while doing laundry, cleaning cars, and spraying down our camping stuff, we ate at my parents. Tostada! With Chile Verde… Mmmm! Ever since camping in Carp, I’ve been having meat here and there. I have to be honest and say while it tastes good, I’m not so sure I like how it feels in my body. I’m going to continue experimenting though, and only having it when it sounds good.
Petite Treat was a little Mango Cream square at my parents house. Yummy!
For dinner, I made brown rice pasta with creamy tomato basil marinara (yum!!!), homemade garlic bread, and a side salad with mandarin oranges. For the dressing, I used olive oil, soy sauce, and apple cider vinegar. This is our go-to dressing.
And of course, to continue the popcorn routine, popcorn at night! I can’t wait until I start making my own. One more pre-packaged bag to finish, and them I’m off to the store to buy canola oil, pink himalayan sea-salt, white corn kernels, and an old fashioned pressure cooker!
